You change the tag to the buyers tag so that they can take control of the domain. After this you fill out a Nominet Transfer Form with the details of the curent registrant (you) and a covering letter stating that you want to transfer the domain to the buyer. Then you send the form and letter to the buyer, they fill out their part of the form and write their own covering letter and then send everything off to Nominet.
