I've got a few domains coming up, where the purchaser has not sent off the Nominet form and the new TAG holder has not renewed the domain.
(I now don't release the TAG until I see the registered owner change.)
I have forwarded the Nominet proforma invoice to the purchaser, but nothing has happened yet.

The domains were mostly £3xx. They all don't resolve, or go to parking.

I can't think of any option that isn't going to land me in a load a hassle at some point.

You could explain this to Nominet and they may put a do not cancel on them. The buyer then gets a chance to step up and do the transfer at some point and the names dont drop. If the buyer requested the tag change during the sale negotiation and you have email proof etc I think that he's got no come back further down the line if Nominet remove the do not cancel and the name drops, especially as you've repeatedly tried to get him to do the transfer. Tough luck for him IMO.

Obviously you are still in the firing line if the names are dirtbags and linger on regged to you. ;-)

Send them a recorded delivery letter explaining the name will drop.

You can then get printable confirmation it has been delivered or printable confirmation it is returned to you should they contact you at a later date.
