Does anyone know where (or if) you can rename the global, literal constants: 'categories' and 'pages'?

Do you definitely need to change them or would a plugin like http://wordpress.org/extend/plugins/wp-no-category-base/ work?

There are several that can remove pages etc but if you want to completely change I will send you over the details when someone has emailed me later.

I want to change the actual 'Posts in' text on page to something else - probably simple for a proper wordpress developer!

Yep that should be pretty easy alot depends on the theme pm me over your site url.

I found it - in archive.php - why is it always in the last place you look!
