I was just scanning though a couple of names I'm interested in and there is a new field within the whois called DNSSEC which I've never seen before.

Anyone know what it is? I presume it's DNS Security.

Edit: In fact it's on all domain whois results now.

Yes, it's designed to prevent forging of DNS data by enabling the signing of DNS records. Nominet have added support to allow anyone with a .uk domain to make use of DNSSEC should they wish.

The field in the whois will basically contain whether or not zone data is signed or unsigned.
