Hi,

What do people use for "tracked email" to know when an email has been opened/read?

I'm on the hunt to try and contact some people and this would be a handy mechanism to know I'm on the right track.

I find the email tracking in hostinger is quite effective. Unless the recipient is blocking remote content you get the tracking response without them easily noticing.
 
Does this even work anymore or is it something that is wrongly being perpetuated?
Last time I checked (many years back when I was involved in email marketing campaigns) Gmail introduced an image proxy by default and Microsoft announced one too.
Unless there's a new technique of doing this, that invisible pixel image in your emails is only tracking the activity of a proxy server.
