Is there any simple way to do this?

I have. Web site that I have set up for PayPal and set up the return address etc

Say I wanted to have another web site doing the same can it be done? Or would you need a new PayPal account for each one as it only has 1 return address space?

Annoyingly paypal are really arsey over multiple accounts and cite money laundering reasons as to why you're not supposed too.

Are you talking about shipping address for returned products or return website address once sale has completed ?

You can pass the return web address with the payment details or you can do it with paypals ipn too.
 
You can pass a whole variety of useful info into the initial PayPal request so no reason not to return to a different return location for each site after payment.

By specifying the site specific details you can keep the PayPal account generic and tailor each site's specific return address, IPN handler and so on
