If you join up with Paddy power at paddypartners.com they offer deep linking but William hill who use affutd.com they don't offer deep linking which can be annoying but they do have various sized banners showing live horse racing odds.

You can now manually allow gambling ads within adsense, however you cannot place them on websites that allow gambling or link to sites where you can place bets. It's very annoying, but in place, I assume so they can't be accused of encouraging online gambling in the States, where it's illegal.
