Magento 2 - Need New Hosting - Scaleable ASAP

Ok - I know we shouldn't be using Magento as it's more than complicated and difficult to work with, but we are so we're rolling out a brand new version of the website on a clean version.

Ecommerce - 2500 products - basic theme and being slimmed down still further.

We need a T1 hosting company and a 'dedicated' / cloud VPS :

CPU - 8 cores

RAM - 32GB - 64GB

SSD - 512GB - 1TB

Ideally, reducing latency for DNS, we're happy to switch the nameservers to the same company to save a few ms.

Any advice... Rackspace are now so difficult to deal with - even with an account manager we have had for 15 years... so any suggestions and experiences welcome.
