I actually don't sell that many domains (just buy them) but here are my thoughts for what they're worth:
- Use Sedo.co.uk or another established marketplace, which handles taking the payment for you.
- Hang around on this forum and only deal with established active members of the community. You will get to know the posters and can view their histories, and this is often a good way of decreasing your chance of getting ripped off.
- Use an escrow service.
I would say accepting payments via Paypal can be the riskiest, you'll see some posts here about that.
