On the new ios7 if you open safari then type in the address bar for instance acorndomains then keep your finger on the . Button (right of space) you get domain extensions .co.uk ,.net,.com etc but also .uk ?

Is there a .org.uk, .me.uk on there too? If not, it could simply be to facilitate typing such extensions in.

I've just looked at this and .uk is prominently positioned amongst the options and sure enough just adds .uk to the domain! Bizarre

I presume it's to be used as Edwin mentioned, so you can press .org then .uk, but it could be useful on it's own in the future!

It's been like that since 2008, probably the reason some goofball decided it was time to release the .uk as they had no other input.
