I think you need to separate the two:

Liverpool tourism is big business and there is always a demand for hotel rooms hence the reason they keep building hotels and apartments for rent, so the demand is there.

Regardless of the name could you drive traffic to a site selling hotels rooms when the market is saturated by some very experienced marketers with very deep pockets?

Good luck with it as the name in itself is good, even on the org extension.

Just a thought but maybe Liverpool has a hoteliers association or trade body that would be interested in the name if it was for sale.

Hotels are so competitive, I'm not sure whether the amount of resources you will have to put into it will be worth it. You are going to have to build out a large content site and considering the effort needed, I personally wouldn't bother.... .com or .co.uk would be a different story ofc.

Having said that, imo there is resale value there so worth holding. I would take low xxx for the name if offered.
