If you're going to try and sell it on, probably the .org.uk without hyphen.
The hyphenated .co.uk is fine for a site promoted by SEO only.

Well, I'd like to try the affiliate route, which I suppose either is fine then. Interestingly, another domain I was looking at, the only available is the hyphenated version in .org.uk. Now, the other versions don't even resolve, so do you think it would be worth going the affiliate route with a hyphenated .org.uk? It is in the travel sector. Thanks.

Hyphenated domains are fine if you are just promoting a site through SEO. They are only a problem if you are trying to get the domain noticed by other techniques, e.g. radio advertising.
My own preference for an affiliate site would be the .org.uk over the hyphenated .co.uk. In general, .org.uk is fine for affiliate sites, e.g. ballgowns, raincoats and mens shirts.

I have many hyphenated .co.uk's that get 70%+ type-in traffic. I'd still prefer to have them as non-hyphenated names for obvious reasons, but don't discount them as they do have a value and can make plenty of money, especially if you're developing it as an end user site.
Personally, I would leave .org.uk alone unless it's something that is particularly suited to the extension.
