I managed to transfer domains from 1and1 to 123-reg, but 1and1 do make it really hard.

Go to https://contract.1and1.co.uk and log in then follow the instructions on transfering out.

Yes, its not obvious at 1&1. Go to the link apd suggests and follow the steps then... when it asks you to agree to cancelling your contract worry for a bit about cancelling the whole lot then after a few moments trust that you are really only releasing the domain to another tag and that there has been a loss in translation. All will be well
