I idealy would like to have a few of my domains registered under one of my business names instead of my full name.

Is there anyway I can assign the business name to a few domains in my nominet account or is it a case of having to set up a completly new account and transfer them over?

I see there are quite a few options to change administration names and details in the control panel but nothing that seems to actualy update the whois information or assign to just a select few domains.

I really would just like it all under 1 account instead of having to mess about creating more accounts.

Try just selecting the names to transfer, doing the transfer but keep the same account. That should work. I think. Hopefully.
