Anyone know to force WP into ensuring that it displays the full site when on mobile or tablet. I did have a mobile template (plugin) installed. However I deleted this, but suspect it is still hanging around. Anyone have any suggestions what to do?

Do you mean its still going to the mobile version of your site even after you deleted the plugin?

I assume you installed a mobile theme as well try deleting that from the theme directory

Are you sure you are not seeing a cached copy in your device? Clear the cache and see if it still redirects.
