When you apply for a tag as an individual, do you have to use your surname, or can you choose anything for you tag.

From memory you can choose whatever you like.
 
Thanks. Does anyone have any advice for choosing a good tag name? For example, is it better to have one near the beginning of the alphabet.

I don't see any benefit in having a good or bad tag name. It's probably a good idea to select a tagname whereby you have the same .co.uk - so if your tag is CHEESE then your website is cheese.co.uk.

Having said that, you can opt to be a bit more elusive and have a tag that's completely random and unconnected with your business/trading name.
 
All depends on the use of the tag and whether applying as an individual / soletrader / business.

I've 2 tags (linked). One is my surname for individual use, another a business tag.

From history most tags relate to an individuals name unless business releted when it's a shortened version.

Nominet have a list of current tags on their site. Have a look.
