Does anyone know, if a domain matches a UK Trademark, will this protect a site trading legitimately within its class from a UDRP from other rights-holders? Or could a CTM trump a locally registered trademark in a dispute? Are there any examples of this kind of thing?

Everytime there's a UDRP, the lawyers are going to try and build up a case. There are various factors they have to show, so it all depends on whether they can build strong cases for all of these factors. A lot depends on what was done and when.
